Madrid has a unique way of waking up. As the streets of Malasaña ( Cl. del Marqués de Sta. Ana, 34, Centro, 28004 Madrid ) slowly come alive, café shutters begin to rise, locals head toward work, and travelers wander through one of the city’s most creative neighborhoods looking for their next discovery. But inside Toro Burger, the energy was already completely different. Brazilian music filled the room, the kitchen was already moving at full rhythm, and the atmosphere felt warm, intimate, and deeply personal.
I visited Toro Burger at opening time for lunch while exploring Madrid for Fattori Travel Experiences, searching not only for great food, but for places with identity, restaurants capable of becoming part of the journey itself and Toro Burger immediately felt like one of those places.
A Hidden Burger Experience in the Heart of Malasaña
Located in the center of Madrid’s vibrant Malasaña district, Toro Burger is far from a traditional fast-food burger spot. The restaurant is relatively small and intimate, yet every detail feels intentional. Neon signs, Brazilian-inspired touches, the sound of music in the background, and a welcoming family atmosphere create an experience that feels both international and deeply authentic. The crowd reflects Madrid itself: tourists, locals, young creatives, professionals stopping by for lunch, and burger enthusiasts searching for one of the city’s most talked-about cheeseburgers. What struck me immediately was how curated yet familiar everything felt. Nothing seemed artificial or overly designed for social media. Instead, Toro Burger gives the impression of a place built organically through personality, passion, and genuine connection with people.
And that feeling becomes even stronger once you learn the story behind the restaurant.
The Story Behind Toro Burger Madrid
Behind Toro Burger is Dado Lima , the charismatic founder whose journey from Brazil to Spain became the soul of the entire brand.
His story is not simply about opening a restaurant. It is about taking a risk, leaving everything behind, and starting over from zero in a completely different country to chase a dream.
That sense of courage is visible everywhere inside Toro Burger — from the awards displayed on the walls to the family photographs that quietly remind guests that this business was built through sacrifice, consistency, and love for the brand itself.
Over the years, that dream transformed into one of Spain’s most celebrated cheeseburgers, earning Toro Burger recognition well beyond Madrid’s food scene. But what makes the experience special is that the success never feels corporate or distant. The restaurant still feels personal.
Meeting Dado, you immediately notice the energy and warmth that became the foundation of the project. His personality is inseparable from the identity of the restaurant itself.
And honestly, I connected deeply with his story.
As someone currently building a life abroad and pursuing my own vision through Fattori Travel Experiences, I understand the emotional weight of leaving familiarity behind in search of something bigger. Sometimes starting over is exactly what allows something unique to exist in the first place.

The Cheeseburgers That Put Toro Burger on Spain’s Food Map
Of course, the real test begins once the food arrives.
We started with handcrafted caipirinhas prepared personally by Dado himself — one strawberry and one piña colada — followed by crispy chicken and perfectly fried bacon served with Toro Burger’s signature cheddar sauce, which quickly reveals itself as one of the restaurant’s true protagonists.
At Toro Burger, cheddar is not simply an ingredient. It becomes part of the experience, accompanying almost every dish and tying together the menu’s bold personality (and is an home-made sauce!)
Then came the highlight of the lunch: the burgers.
The MAYA cheeseburger immediately stood out as the most memorable dish of the experience. In many ways, its greatness comes from simplicity and balance rather than excess. Built with a brioche bun, truffle mayonnaise, double bacon, double cheddar, and caramelized onions, every ingredient works in harmony without overpowering the others.
It is rich, indulgent, and incredibly satisfying, yet surprisingly balanced at the same time — the type of burger that instantly explains why Toro Burger has become so well known in Madrid.
Next came the TURRON burger, arguably the boldest creation on the menu. Served on a striking red bun with bacon, sweet pistachio sauce, and salted caramel, it feels more like a culinary adventure than a traditional cheeseburger.
The combination initially sounds almost excessive, yet somehow it works. Sweetness, saltiness, smokiness, and richness collide in a way that constantly surprises the palate.
And naturally, both burgers arrived alongside Toro Burger’s legendary “cheddar pool,” turning the meal into a full sensory experience rather than a standard lunch.

More Than a Burger Restaurant
While the burgers may be the stars, Toro Burger’s philosophy extends well beyond them.
The final course of the experience perfectly captured the restaurant’s personality: a cheesecake duo built on a cinnamon cookie base and cream cheese filling, topped with Brazilian brigadeiro chocolate and a spicy jam made with red berries and chipotle.
The dessert became the emotional climax of the meal.
What initially sounds unusual — mixing sweetness with spice — ends up cleansing the palate and continuously revealing new layers of flavor with every bite. It is playful, slightly chaotic, bold, and unexpectedly addictive.
In many ways, that dessert perfectly summarizes Toro Burger itself.
A little sweetness.
A little madness.
And just enough spice to make the experience unforgettable.
Why Toro Burger Represents the New Madrid Food Scene
Madrid’s food scene has evolved dramatically in recent years, becoming one of Europe’s most exciting culinary destinations. What makes the city special is not only technical quality, but also the diversity of stories behind its restaurants.
Toro Burger represents this new generation of Madrid dining perfectly: international influence, entrepreneurial courage, emotional storytelling, and personality-driven hospitality.
The restaurant succeeds not only because of high-quality ingredients or award-winning recipes, but because guests can genuinely feel the passion behind the project.
That authenticity is increasingly rare — and increasingly valuable.
